A note on nutrition

Microgreens are food, not medicine. Their nutrient profile changes with species, seed, light, growing method, and harvest stage. We share the research honestly and skip cure-all promises.

The nutritional overview

Tiny leaves. Serious plant chemistry. No magic claims.

Microgreens are edible seedlings harvested after their first leaves develop. Research has found that many varieties contain meaningful concentrations of vitamins, carotenoids, minerals, and other bioactive plant compounds. The important nerdy detail: the numbers vary—sometimes widely—by crop and by how it was grown.

A landmark USDA-linked study of 25 varieties found higher nutrient density in the young leaves than in mature leaves for the vitamins and carotenoids measured, but it did not show that every microgreen is identical or that a small serving replaces a varied diet.

Vitamins

Studies across many microgreen varieties report vitamin C, vitamin E, vitamin K, and provitamin A carotenoids—with large differences from crop to crop.

Color compounds

Carotenoids, chlorophyll, anthocyanins, and other pigments help create the vivid greens, reds, and purples that make young plants visually distinct.

Brassica chemistry

Broccoli, kohlrabi, and radish belong to the brassica family, known for glucosinolates and polyphenols as well as familiar peppery or cabbage-family flavor.

Minerals & structure

Microgreens can contribute minerals and plant compounds, while substantial crops such as sunflower also bring crisp stems and a more satisfying bite.

Research note: nutrient concentrations are not guaranteed for a specific Lee Crisp Farms cup. Wash harvested greens gently just before eating and do not eat greens that show mold or an unusual odor.

Grown With Purpose

We are growing more than microgreens.

Lee Crisp Farms began with a simple goal: make fresh nutrition easier to bring into everyday life. What started as a home-growing project gradually became something larger.

Our daughter became invested in the farm and excited about its possibilities. The grow space gives our family a place to learn through observation, measurement, problem-solving, creativity, and responsibility—one small crop at a time.

We are building the farm carefully: listening to what neighbors want, learning what each crop needs, and sending living greens home when they are ready.
